做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量(liàng )清水半掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖(gài )上锅(guō )盖焖。
