做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把陈皮泡软,拍裂(liè )一(yī )小块姜,热锅,用姜块在锅上擦一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入(rù )煎煮好(hǎo )的鲫(jì )鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火煲一个半小时,下盐调味即可品尝。
