做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干(gàn )的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
