做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生(shēng )姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
