做法:洗净(jìng )宰好鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清(qīng )水(shuǐ )把(bǎ )陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜块在锅上擦一遍(biàn ),放两(liǎng )勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个半(bàn )小(xiǎo )时,下盐调味即可品尝。
