做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水把陈皮泡软(ruǎn ),拍裂一(yī )小(xiǎo )块(kuài )姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热下鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝。
