做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两勺(sháo )油(yóu ),待油六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼(yú )和其他(tā )材料,武火(huǒ )煮沸,转中小火煲一个半(bàn )小时,下(xià )盐调味即(jí )可品尝。
