做法:春笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸(jìn )泡(pào ),生(shēng )姜切片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
