做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入(rù )少量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
