做法(fǎ ):春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
