做法:春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
