做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用(yòng )清(qīng )水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的(de )鲫鱼和(hé )其他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。
