做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
