做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺油,待油六成热(rè )下(xià )鱼,煎至(zhì )微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的(de )鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
