做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
