做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
