做法:春(chūn )笋切成片后加(jiā )少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候(hòu )加入盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
