做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
