做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的(de )鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一(yī )个半小(xiǎo )时,下(xià )盐(yán )调味(wèi )即可品(pǐn )尝。
