做法:春笋切成片后加少(shǎo )许盐捞(lāo )出(chū )后用(yòng )清水浸泡(pào ),生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
