做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
