做(zuò )法:春(chūn )笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
