做(zuò )法(fǎ ):春(chūn )笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
