做(zuò )法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
