做法:洗净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦(cā )一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸(fèi )瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火煲(bāo )一个半小(xiǎo )时(shí ),下(xià )盐调味即可品尝。
