做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的(de )时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖焖。
