做法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
