做(zuò )法(fǎ ):春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
