做(zuò )法:春笋切成(chéng )片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
