做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖(mèn )。
