做法(fǎ ):洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块(kuài )在锅上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐调味即可品尝。
